Description

The main flaw within a basket driven frying system is the time the food spends outside the oil before service. A basket of fried food left hanging while excess oil drips off cools every second there. Now, the Pitco Crisp 'N Hold 2 Section Floor Model Crispy Food Station (PCF-14) has a different plan. The PCF-14 extends the hold time of the food by implementing a constant flow of warm air in and around each basket of food. The heated air is then recirculated and filtered to reduce moisture, save energy and maintain the temperature.
